This afternoon I had a fantastic lunch with the mother dear and godmother dear at Chez Sophie, a local French-style restaurant in Winnipeg. I enjoyed little toasts slathered with goat cheese on a bed of greens topped with a drizzle of balsamic dressing, accompanied by a glass of red wine and followed with creme brulee. Mmm.
I will definitely be returning to the little bistro! But in the meantime, I might just have to recreate their delicious goat cheese salad at home with a few of my own touches. This is what I’m envisioning putting together:
- Arugula and baby spinach.
- Cherry tomatoes.
- Goat cheese (or other soft cheese – I bet brie would be really nice) on small pieces of garlic toast – you could just take a slice of homemade whole wheat bread, butter it up, sprinkle plenty of garlic powder on top, bake it in the oven, and then cut it into a few pieces and top with the cheese.
- Balsamic vinegar.
The dressing seemed to be a combination of balsamic vinegar and dijon mustard with some other ingredients, but I think that even just straight balsamic could be a really nice light addition to the greens, toast, and cheese. Even on a snowy winter day this was a great meal – bet it would be just perfect on a warm summer day!
