Elk & Kale Stems

Mr Science recently made a FANTASTIC dinner of elk stir-fry meat and kale stems. This is a great way to have a high-protein meal with all the benefits from dark leafy greens! It also reduces food waste – too often, the stems from kale and other veggies are just tossed out instead of used. But kale stems especially are great when cooked stir-fry style in a pan. They taste almost like asparagus.

We demolished this meal - this is the little bit of leftovers!

Add any of your favourite spices to the stems and elk meat – it will turn out awesome.
